Large Copper Roaster/Steamer
The French have a particular pan for every mode of cooking. However, these large-size roasting pans are the workhorse of any chef’s kitchen. They are used for cooking large poultry such as turkey or goose, as well as, larger cuts of meat. They can hold vegetables and other ingredients that meat can sit on rather than a rack, letting the vegetables absorb the fat and juice from the meat while cooking.
In short, this deep roasting pan can hold anything a chef can create for baking, roasting etc., including holding smaller baking dishes that must be surrounded by boiling water.
Our large roaster is in pristine condition, dovetailed and has solid brass hardware.
We love antique copper pans and use them exclusively in our home. Copper conducts heat quickly and evenly with no hot spots on the bottom of the pan, allowing for greater control because the pans heat up faster, then cool down faster when taken from the heat. Copper pots are the prize of a chef’s kitchen.
